Combine the ground pork, half of the Shaoxing wine, half of the regular soy sauce, white pepper and five spice powder an mix together. Set aside and marinate for 10 minutes.
80 grams ground pork, 2 tbsp soy sauce, 2 tbsp Shaoxing Wine, ½ tsp white pepper, ½ tsp five spice powder
Preparing the fresh ingredients
Finely chop the fresh ginger and set aside. Finely slice the Scallion, separating the whites from the greens.

Preparing the Sauce
For the sauce, in a medium bowl combine tahini, chili oil, regular soy sauce, dark rice vinegar, sesame oil and dark soy sauce, cane sugar and ground sichuan pepper powder. Also grind the fresh garlic into the bowl using a microplane.Mix everything together and set aside for later.
Set a medium frying pan to high heat and add some oil. Fry the minced pork until golden brown and add the minced ginger and scallion whites. Fry for another 1-2 minutes, then deglaze with the Shaoxing wine. Put the pan aside.Now cook your noodles and also blanch your leavy greens. Keep some of the Noodle water for the sauce.
300 grams pre cooked Noodles, 2-3 leaves Bok Choy
Serving the Dan Dan Noodles
Dilute the Sauce with 4-5 tbsp of the Noodle water. Now add the cooked Noodles to the sauce and give a good mix.Put the Noodles into a serving bowl together with the leafy greens and top with the fryed pork. Garnish with some scallion greens and ground peanuts and don't forget to drizzle some extra lovely homemade chili oil (recipe for homemade Chinese chili oil is linked above).Enjoy a super fragrant and tasty bowl of authentic Sichuan Dan Dan Noodles!
