finely mince the garlic and fresh ginger and put into a heatproof bowl. Add chili oil, chili flakes, salt and white sesame seeds.

In a small saucepan, heat up the granola/peanut oil. When the oil starts to smoke, take it from the stove and pour it over the other ingredients in the bowl.

Add soy sauce, vinegar and pure sesame oil and mix together.
1 tbsp soy sauce, 1 tbsp dark rice vinegar, 1 tsp pure sesame oil
Cook the udon noodles until they're soft, drain them and put them into the garlic chili oil mix.
300 g udon noodles
Mix the Noodles well with the sauce and garnish with a fried egg, some sliced spring onion greens and some black sesame seeds. Enjoy!
