Chili Garlic Udon Noodles

These super savory and umami Asian garlic chili udon noodles are super easy and quick to make and perfect as a busy weeknight dinner.

  • finely mince the garlic and fresh ginger and put into a heatproof bowl. Add chili oil, chili flakes, salt and white sesame seeds.
    2 gloves garlic, 1 thumb fresh ginger, pinch salt, 1 tbsp chili oil, 1 tsp chili flakes, 1 tbsp white sesame seeds
  • In a small saucepan, heat up the granola/peanut oil. When the oil starts to smoke, take it from the stove and pour it over the other ingredients in the bowl.
    4 tbsp granola / peanut oil
  • Add soy sauce, vinegar and pure sesame oil and mix together.
    1 tbsp soy sauce, 1 tbsp dark rice vinegar, 1 tsp pure sesame oil
  • Cook the udon noodles until they're soft, drain them and put them into the garlic chili oil mix.
    300 g udon noodles
  • Mix the Noodles well with the sauce and garnish with a fried egg, some sliced spring onion greens and some black sesame seeds. Enjoy!
