Steps to Prepare My Chinese Dan Dan Noodles

Alright, ready to roll up your sleeves and make some dan dan noodles? Let’s break it down step by step.

Step 1: Marinating the Pork

First, we will marinate the minced pork. Mix together the ground pork together with half of the Shaoxing wine, half of the regular soy sauce, white pepper and five spice powder. Marinate the pork for 10 minutes.

Step 2: Preparing the Dan Dan Sauce

For the sauce, combine tahini, chili oil, half the regular soy sauce, dark rice vinegar, sesame oil, dark soy sauce, ground Sichuan pepper powder and cane sugar. Finely grind the fresh garlic into the bowl as well using a Microplane. Give the sauce o good mix and put aside for later.

Step 3: Preparing the fresh Ingredients

Finely chop the fresh ginger and also finely slice the scallion, separating the whites from the greens.

Step 4: Frying the pork and cooking the Noodles

After marinating the minced pork for a while, it’s time to fry it. Set a medium frying pan to high heat and together with some oil, fry the pork until golden brown. Now add the minced ginger and scallion whites an fry for another 1-2 minutes. Deglaze with some Shaoxing wine and put the pan aside.

Cook your Chinese Noodles of choice until soft and also blanch some leafy bok choy or other greens of your choice. Keep some Noodle water to loosen the sauce.

Step 5: Combining the Chinese Dan Dan Noodles

Dilute the Sauce with a few tbsp of Noodle water and then add your Noodles. Give everything a good mix and then put the Noodles in a large serving bowl together with your greens.

Top up the Noodles with the juicy pork and garnish with some crushed peanuts and scallion greens.

Marinating the Pork

  • Combine the ground pork, half of the Shaoxing wine, half of the regular soy sauce, white pepper and five spice powder an mix together. Set aside and marinate for 10 minutes.
    80 grams ground pork, 2 tbsp soy sauce, 2 tbsp Shaoxing Wine, ½ tsp white pepper, ½ tsp five spice powder

Preparing the fresh ingredients

  • Finely chop the fresh ginger and set aside. Finely slice the Scallion, separating the whites from the greens.
    1 thumb size fresh ginger, 1 spring onion

Preparing the Sauce

  • For the sauce, in a medium bowl combine tahini, chili oil, regular soy sauce, dark rice vinegar, sesame oil and dark soy sauce, cane sugar and ground sichuan pepper powder. Also grind the fresh garlic into the bowl using a microplane.
    Mix everything together and set aside for later.
    2 tbsp tahini (sesame paste), 1 tbsp dark rice vinegar, 1 tbsp chili oil, 1 tsp dark soy sauce, 1 tsp sesame oil, 1 tsp cane sugar, 1 tsp ground sichuan pepper, 1 clove garlic

Frying the minced pork & cooking the Noodles

  • Set a medium frying pan to high heat and add some oil. Fry the minced pork until golden brown and add the minced ginger and scallion whites. Fry for another 1-2 minutes, then deglaze with the Shaoxing wine. Put the pan aside.
    Now cook your noodles and also blanch your leavy greens. Keep some of the Noodle water for the sauce.
    300 grams pre cooked Noodles, 2-3 leaves Bok Choy

Serving the Dan Dan Noodles

  • Dilute the Sauce with 4-5 tbsp of the Noodle water. Now add the cooked Noodles to the sauce and give a good mix.
    Put the Noodles into a serving bowl together with the leafy greens and top with the fryed pork. Garnish with some scallion greens and ground peanuts and don't forget to drizzle some extra lovely homemade chili oil (recipe for homemade Chinese chili oil is linked above).
    Enjoy a super fragrant and tasty bowl of authentic Sichuan Dan Dan Noodles!
